Ingredients
  

  • 15 oz mandarin oranges
  • Clean water as needed
  • 1 cup Organic raw Sprouted Quinoa
  • 1 pound strawberries washed, stemmed and quartered
  • 1/3 cup toasted sliced almonds
  • 1/3 cup salad Asian dressing

Instructions
 

  • Juiced the orange and reserve orange. Add water to the juice to make 11/2 cups. Pour the orange juice mixture in a medium saucepan, add the quinoa and bring to boil over medium-high heat.
  • Reduce heat to medium heat, cover and let it simmer until no more liquid, for about 15 minutes. Put off the heat and stand covered for 5 minutes or until cool to room temperature. Fluff with a fork
  • Combine the strawberries, oranges and almonds in a medium mixing bowl, add dressing and toss well
  • Spread quinoa on and serving plate and spoon the mixed fruit on the centre, keep in the fridge until time of serving.

Notes

Note: to toast the almonds, place in a dry nonstick skillet and cook over
medium heat, shake pan often until the almonds are lightly browned, don’t let
it over brown. Remove from the heat.
